I had the most wonderful dinner with @marcichin where we ate plenty and discussed our weird families (we are perfect, naturally). Next time we meet it gonna be for Pho, just sayin'. Oh, and the food was great, the drinks were adequate, the company dope!
Birthday breakfast #birthday#gettingold#breakfast#pandaeatsvietnam Hủ Tiếu Nam Vang : soft rice noodles, topped with some slices of pork, liver, intestines, a quail egg, and finally a shrimp, all sprinkled with a touch of pepper, and some chopped green onions, cilantro, fried garlic and fried pork lardo. And the hot broth on the side. This bowl of noodles in combination with the broth had a nice mellow pork flavor, the both was slightly salty and slightly sweet, and had a nice richness to it. The noodles were soft, similar to pho, and the meat was good, yet not to plentiful. Adding the hot chilis, fried chili garlic and lime juice both elevated the dish and rounded out the flavors. This was a great start to my birthday!

I just put all of this together to make a casserole for a baby. Everything was diced to about the size of your little fingernail, garlic finely chopped, sautéed in butter until veggies softened a little first, and then chicken was added and cooked through. Cover with water or homemade (or low-salt) stock and simmer for about half an hour covered. The cannellini beans and potato will dissolve a bit to thicken it. Easy!
Does anyone else just make recipes up as you go or do you prefer to follow recipes to the letter?
